The clear highlight of my visit was the Goboten (burdock root tempura) udon. In many places, tempura loses its structure quickly in broth, but here, the texture remains crisp and satisfying until the very last bite. The broth is the real star—it’s delicate and deeply savory, allowing you to appreciate the quality of the dashi without being overwhelmed by heavy seasonings.
