Each bite is balanced and elegant, showcasing seasonal harmony. Before this, I was served conger eel so impossibly fluffy and perfectly cooked that it set a very high bar for the rest of the meal.

The main event is the handmade soba, crafted from premium Hokkaido buckwheat. You are encouraged to enjoy your first bite simply with salt, which highlights the nutty, raw intensity of the grain. However, the true showstopper is the sobayu (soba water). It is, without exaggeration, the best I have ever had—thick, creamy, and deeply flavorful. It is so legendary that some regulars visit the shop solely to drink it. To finish, don’t miss the “Shippo” sweets; they are so delicious that I always find myself purchasing a box to take home.
