Despite the higher barrier to entry compared to their previous 8,000 yen offering, the experience is so masterfully executed that it remains an incredible value for the level of culinary craftsmanship on display.

The variety of fish served in this course is staggering. From melt-in-your-mouth sweet snapper and rich oyster to eel and squid, the sheer diversity left me breathless. I was particularly impressed by the opening dish: a cod milt (shirako) puree fortified with miso and sea urchin.
